The world famous Cassoluet is produced in Castelnaudary and served in most restaurants. The Cassoluet was traditionally a meal served from a pot that simmered daily in most farm houses. The ingredients consist of Toulouse sausage, duck, pork, chicken and haricot blanc. The Cassoulet is celebrated in a 5 day event in Castelnaudary; with street parades, regional music, dancing, drinking and large tented areas serving copious amounts of Cassoulet.
